Inside my experience at NOD Punjabi Bagh and Coffee Sutra’s Delhi Debut

Delhi’s brunch scene is crowded with options, but every once in a while, you come across a place that genuinely surprises you. My recent visit to NOD in Punjabi Bagh turned out to be one of those experiences—not just because of the food, but because of the attention being given to coffee.

I visited NOD for a leisurely coffee brunch and walked away feeling like I had discovered something refreshingly different. While the food was impressive, it was the live coffee experience that became the highlight of the afternoon.

The brunch began with a spread of fresh, wholesome dishes. I sampled the smoothie bowl, kale and quinoa salad, avocado mushroom toast, pizza, pasta, and sandwiches. What stood out was how balanced everything felt—clean flavours, fresh ingredients, and dishes that didn’t try too hard to impress. They simply worked.

NOD has recently partnered with Jaipur-based specialty coffee brand Coffee Sutra, which has officially made its Delhi debut through this collaboration. Founded by restaurateur and coffee entrepreneur Dushyant Singh, Coffee Sutra now manages NOD’s entire beverage programme, bringing its expertise in specialty coffee, handcrafted beverages, and coffee education to the restaurant.

What this means for diners becomes evident the moment you approach the coffee counter.

The team walked me through different coffee beans, explaining their origins, flavour profiles, and brewing characteristics. Instead of simply serving a cup of coffee, they transformed it into an experience. I was treated to a live demonstration of both deconstructed coffee and siphon coffee brewing, allowing me to watch every step of the process unfold.

The siphon setup immediately drew attention. Equal parts science experiment and coffee ritual, it created a sense of theatre rarely seen in Delhi’s casual brunch spaces. Watching the coffee brew through the glass chambers before being poured fresh into the cup added an element of craftsmanship that elevated the entire experience.

The deconstructed coffee presentation was equally engaging, breaking down flavours and components in a way that encouraged guests to understand what they were drinking rather than simply consuming it.

Every cup was brewed fresh on the spot, and the enthusiasm of the baristas was infectious. There was a genuine effort to educate and engage, making the experience feel personal rather than performative.

The coffee station itself has been installed and operated by Coffee Sutra, a brand known for sourcing ethically grown beans, operating its own roastery and Coffee Lab in Jaipur, and conducting brewing workshops and barista training programmes. With a growing presence across India and collaborations with hospitality names including Fairmont, Novotel, and Jamie Oliver Kitchen, the brand brings considerable specialty coffee expertise to the table.

What makes the partnership between NOD and Coffee Sutra particularly successful is that the beverages are designed to complement the food rather than compete with it. Whether paired with a healthy brunch plate or a more indulgent meal, the coffees, smoothies, shakes, and handcrafted beverages feel thoughtfully integrated into the overall dining experience.

For Delhi’s growing community of coffee enthusiasts, this collaboration introduces something that has often been missing from traditional brunch outings—a beverage programme that receives as much attention as the kitchen.

About the Collaboration

Coffee Sutra’s arrival at NOD Punjabi Bagh marks the Jaipur-based specialty coffee brand’s first major step into Delhi. Founded by restaurateur and coffee entrepreneur Dushyant Singh, Coffee Sutra has been appointed as NOD’s official beverage partner, curating and managing the restaurant’s complete beverage program.
