Hyatt Regency Delhi introduces Travel Diaries by Chef Zhang, a limited-period regional Chinese dining experience at its celebrated restaurant, The China Kitchen. Curated by Executive Chinese Chef Zhang Hongsheng, the menu is a personal interpretation of his culinary travels across China — from Sichuan and Guangxi to Beijing, Shandong and Hunan.

Running until 23rd November 2025, this pop-up offers guests a rare opportunity to explore authentic regional Chinese flavours beyond the usual Cantonese and Sichuan staples.


A Menu Rooted in Journey and Heritage

Chef Zhang’s inspiration comes from years of travelling across China — through Sichuan, Guangxi, Shandong, Beijing and Hunan — learning how food changes with geography, climate and local culture.

Expect traditional techniques like:

  • Claypot cooking
  • Dry-heat stir-frying
  • Slow braising
  • Regional spice blending

Each method is used to retain authenticity while presenting flavours in a way that resonates with today’s modern diner.

As Chef Zhang explains,
“Cooking is my passion. This ‘Travel Diaries’ menu is a tribute to the vast, beautiful history of China’s food. Each dish is a story, a moment of tradition thoughtfully reimagined. Our aim is to transport our guests, one flavourful bite at a time, to the authentic culinary landscape of my home country.”
