Easy Recipes to Surprise Your Mother during Lock-down

Mother’s Day is a perfect occasion to pamper the most important person in your life.As we are in the third stage of lock-down, this year’s celebrations will be different than usual. So, this Mother’s day, let’s surprise your mom with your culinary skills by making a delicious meal to show how much you care and make her feel special.

So, put on your chef’s hat and get set to cook amazing snacks or desserts for your beloved mom and make the most out of the precious time together. We have curated a special list for this day. Try these exciting recipes from Del Monte to make it a memorable day for her.

Vegan Pumpkin Pasta

 

INGREDIANTS:

  • TBSP Del Monte Extra Virgin Olive Oil
  • ¼ Cup Chickpea Flour OrBesan
  • ½ Cup Coconut Milk
  • 1 Cup Pumpkin Puree
  • 2 TBSP Italian Seasoning Mix
  • 1 TBSP Black Pepper Powder
  • 1 TBSP Red Chilli Flakes
  • 1 TBSP Dry Italian Herbs
  • 2 Cup Cooked Or Boiled Del Monte Whole Spirali Pasta
  • Salt to Taste

METHOD:

  1. In a pan, heat Del Monte extra virgin olive oil. Add and roast chickpea flour or besan.
  2. Next, add coconut milk. Whisk and mix to form a thick paste.
  3. Then, add the pumpkin puree and cook for 5 minutes on low heat.
  4. Add black pepper powder, dry Italian herb, salt and Italian Seasoning Mix, red chilli flakes and mix well.
  5. Further, add the boiled or cooked Del Monte whole Spirali pasta to the freshly prepared pumpkin sauce. Mix well.
  6. Finally, garnish the pumpkin pasta with coriander leaves and serve hot.

Del Monte Mint Mayonnaise Stuffed Potato Cutlets

INGREDIENTS

  • 4 big potatoes
  • ¼ cup DelMonte Mint Mayonnaise
  • 3 tablespoon grated cheese
  • 1 teaspoon red chili powder
  • 1 teaspoon oregano
  • 2 tablespoon coriander powder, finely chopped
  • 1 teaspoon coriander powder
  • ¾ teaspoon amchur powder
  • Salt to taste
  • 1 tablespoon corn starch
  • Bread crumbs for coating
  • Oil for deep frying

     METHOD

  1. Boil potatoes, peel the skin and grate into a bowl.
  2. Add red chili powder, cumin powder, amchur powder, coriander leaves, oregano, and salt to taste. Mix well.
  3. Mix corn starch with 1 teaspoon water; whisk well to ensure no lumps are present. Keep aside.
  4. Take a portion of the potatoes, roll into balls. Make a small hole in the middle. Spoon in DelMonte mint mayonnaise and then top it with grated cheese. Take another small portion of the potato mix and cover the mayonnaise stuffed potato balls. Seal well and make sure mayonnaise does not ooze out. Flatten slightly into disc.
  5. Whisk the corn starch once again, dip the cutlets in the corn starch, coat with bread crumbs well, keep aside. Repeat this for the remaining mix.
  6. Heat oil for deep frying. Once oil turns hot drop is carefully few cutlets at a time. Fry on medium heat until cutlets turn crunchy and golden brown on all sides. Remove from the oil and place on kitchen paper.
  7. Serve hot with mint chutney or tomato ketchup.

Blueberry Muffins

INGREDIENTS

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 cup yogurt
  • 1/2 cup flavorless oil
  • 1 teaspoon vanilla extract
  • 2 Cup Del Monte Dried Blueberries

    METHOD

  1. Preheat oven to 400F degrees and line standard muffin pan with paper liners and set aside. To make the muffins in large bowl stir together flour, baking powder and salt and set aside.
  2. In a medium bowl, whisk together eggs and granulated sugar until combined. Whisk in yogurt, oil, and vanilla extract (mixture should be pale and yellow)
  3. Fold wet ingredients into dry ingredients and mix everything together using a spatula. Fold the blueberries in the batter.
  4. Spoon batter into the prepared muffin tins, filling about 2/3 of each cup.
  5. Place them in the oven and reduce the heat at 375F , bake about 18-20 minutes or until the toothpick inserted in the center comes out clean.
  6. Cool for 5 minutes in the pan then remove muffins and cool on a wire rack.

Reminiscing about the Power of Motherhood

Mother’s Day is a beautiful day celebrating the sheer joy of motherhood. The famous poet Rumi once said that, we are born of love; and love is our mother. I feel it best describes the innate connection between a mother and child, as it’s the purest and untainted bond there can ever be; born in love, and cherished lovingly forever.

The relationship between parents and children, is tremendously powerful, scarcely to be comprehended in any rational way. The natural responsibility of motherhood is of being an unselfish anchor, and an unfailing compass. My mother always inspired me to stand tall in my own self, loving yet firm, and it’s the same lesson that I have tried to impart to my own children.

Reminiscing about the power of motherhood on this day, I muse about my bond with both, my mother, and my children, and how the purity of these bonds is essentially the same. There is no bond stronger than the one between a mother and her child. I still remember how my younger one and I began to giggle, and then fell into a side-splitting round of laughter. It was a cleansing, a complete sort of laughter, that only a mother and child can share.

About the Video

The video in Hindi tells the story from the point of view of a stone that how a stone being part of our lives in many ways from being a Chulha for poor to his livelihood as labor to part of games played by children to building monuments like Char Minar and Taj Mahal, but never felt like stone until some people threw it on life saviors.

Concept

The creators of the video Roopesh Jain and Shivil Gupta tell that after watching news everyday on television about nurses and doctors being attacked it pained us a lot and we thought of giving the message to people but did not want to go on a traditional path. After lots of discussion we came with this idea that if we tell a story and talk about the pain of a stone itself when it being thrown to life saviours,it will leave more impact.This is how the germ of this video planted and we started working on this.

Aditya Kumar,a senior journalist also came on board to support the idea as he felt that this story and point of view needs to be told.

Film &TV actors unite to boost public morale

In an attempt to pump up Indians with positivity, especially when the medical team and police personnel across the country is putting in great efforts to fight the pandemic. Bollywood actors like Shawar Ali, Nidhi Subbaiya, Milind Gunaji, Hiten Tejwani and TV celebs like Samiksha Bhatnagar and Aditya Rajput have joined hands and launched a hope anthem. The song Jaan Hai Toh Jahaan Hai is conceived by director Rajiv S Ruia, produced by Deepak Ruia, supported by Gaurav Patel, Ravindra Ram Patil and Irshad Khan. Material Manifestations

Artists: Anju Dodiya, Atul Dodiya, Ranbir Kaleka, Shilpa Gupta

In an act that could be defined as “a return to matter” the artists in this exhibition explore the possibilities, limits, vulnerabilities and paradoxes of material in the making of an artwork. The inert and extra-discursive conception of matter, and therefore material, comes under the critical lens in a new-materialist turn. Through choice, play and manipulation of materials, the artists open up gateways into their own psychological and political inner lives, dwelling on subjects such as comfort, anxiety, political-will, satire and relationships.

Anju Dodiya’s collage of fabrics and mattresses painted with biblical scenes of the Apocalypse is a careful crafting of materials that allows her to de-personalise the fear of bearing witness to the descent of civilization. Shilpa Gupta’s series 100 Hand-Drawn Maps of My Country draws us into the complexities of the construction and delineation of space articulated by man made borders. Atul Dodiya’s cabinet evokes a layered dialogue, referencing defining moments art history while also addressing the complexity of various simultaneous moments in history – in politics, art and culture; while Ranbir Kaleka’s works play with the visual surface and visuality itself, created through a fine layering of metaphoric images and historic iconography.

Through artists’ choice and manipulations, the material acquires two types of values – one that emerges from its own object-hood and vitality as in the case of Jane Bennett’s definition of “thing-power”; and second, the kind of value that is thrust upon it through personal association and subjectivity.

Healthy Dietary Regimen at Home During COVID-19 Lock-down

Ministry of Ayush Recommends Preventive Measures

The COVID-19 outbreak, its undeterred upsurge and the abrupt emergence of the unpredictable situation like the lock-down, has brought everyone at one-stop – and that is nowhere but in our homes. Now, our homes have rolled everything into one i.e., office, classroom, bedroom, restaurants, summits and conferences – in the form of Webinars.

 

Following a healthy dietary regimen consisting of right choices of food and more significantly what, how, when and where we eat, will improve our immunity. On the contrary, wrong habits and food choices reduce our immunity, making us prone to virus infection and illness. ‘Right Diet’ is the ‘Right Mantra’ to stay healthy in every circumstance.

According to Ayurveda, diet plays a very important role in improving and maintaining health. It is also helpful in strengthening immunity. Emphasising the importance of diet Maharishi Charak mentions, “If someone’s diet is good he/she will not need any medicine”. He further mentions, “If someone’s diet is not good he/she will also not need any medicine because no medicine will work for him/her.” In the current lock down scenario when we are staying in our houses, the selection of foods are very important from our Body-Type and digestion point of view as our physical activities have relatively come down,” said  Anand Shrivastava, Chairman, Maharishi Ayurveda. 

 

He added further, “Besides knowing what to eat, it is also important to know how much to eat, when to eat and how to eat. Ayurveda explains these in a very scientific and systematic manner with proper logic. The main objective behind this is that whatever one eats, it should get digested properly and assimilated into the system for the balanced production of body tissues, which is necessary for the maintenance of the peak performance of the body, and for staying healthy.”

 

Considering the significance of diet, immunity and health and their good interrelationship, which constitute an ‘Ideal Health’ as per Ayurveda, our  Prime Minister has urged the citizens to follow immunity-boosting guidelines issued by the Ministry of AYUSH to supplement the fight against COVID-19. What the Ministry of AYUSH recommends as preventive measures are part of a healthy dietary regimen. The guidelines laid down by the Ministry find their roots in the science of Ayurveda, which propagates the use of the gifts of nature for a healthy and happy life.

 

“ If we eat foods uniquely suited to our physiology (body-type) and follow a Sattvic (life-supporting) routine that enhances digestion, our bodies will reap the benefits and help us stay happier and healthier. Besides, a balanced diet, a proper Nidra (sleep) also plays an important role in helping us stay healthy. Contrarily, lack of sound sleep increases our risk of developing chronic health conditions, like diabetes, obesity and heart disease,” said Dr. Saurabh Sharma Medical Superintendent, Maharishi Ayurveda Hospital, Delhi.

 

Adding further, he said, “In the current lock-down scenario, we need to make out a balance of both the wholesome food and routine life, which consists of right meal timing, proper sleep, necessary exercise, yoga and meditation. The lock-down phase is an opportunity for us to discipline ourselves that will ensure a healthy living. And this can be done by following a healthy dietary regimen.”

 

Along with healthy foods, we need to include certain Rasayanas (the science of promoting longevity as well as the herbal remedies used to maintain optimal health) in our dietary regimen to ensure holistic health. Also, Rasayana is concerned about the preservation, change, and rejuvenation of energy in our body and mind. Therefore, if we include certain Rasayanas in our dietary regimen, it won’t only help in making our dietary regimen balanced but also contribute to ensuring our holistic health.
